Beautiful. Unlike mine, your fruit does not rise to the top.
Me, I don’t mind canning. It’s the scalding and cooling and peeling part I can’t stand.
I do get that stupid rising. Typically as the jars start to cool. It’s hard to can whole tomatoes when you have to smoosh them into oblivion to avoid the lift. Ah well.
Yeah, the blanching and the peeling…fun stuff. Luckily, the 95 degree weather we had most of the summer was gone when tomato canning time rolled around. We had a battle royale while canning corn this year — oppressive heat and humidity and dozens and dozens of ears of corn to processes.
